Apple + Onion Scrambled Eggs

Apples, onions, and eggs?! Yes – this winning combination makes a (surprising) delicious breakfast. Try with different types of apples to get diferent flavors!

Ingredients

  • 8 Pasture-Raised eggs, beaten
  • 1/2 red onion, chopped
  • 1 celery rib, chopped
  • 1 organic Granny Smith apple, chopped
  • Fresh chives, minced
  • Extra virgin olive oil
  • Sea salt + freshly ground black pepper

Preparation

  1. Put some olive oil in a skillet over medium heat. Add red onion and celery to the skillet and cook 2 to 3 minutes, stirring constantly.
  2.  Add the apple and continue cooking for another minute or two.
  3. Pour the beaten eggs over the apple mixture in the skillet.
  4. Stir slowly with a wooden spoon or a spatula until the eggs are slightly underdone.
  5. Remove from heat, season to taste with salt and pepper, and rest 1 to 2 minutes in the skillet.
  6. Serve topped with fresh chives and enjoy!

Tip

Add red chili flakes for a delicious kick.
