Applesauce Pancakes

You love pancakes, but want something healthy? Applesauce pancakes to the rescue! These simple to make, and yummy to eat. Perfect for kids and adult-sized kids alike.

Ingredients

  • 1¼ cups of organic low-fat milk
  • 2 large Pasture-Raised eggs
  • 2 tablespoons raw organic coconut oil
  • 2 cups organic applesauce
  • 3 cups whole wheat flour
  • 2 tablespoons baking powder
  • 1 teaspoon sea salt
  • ¼ cup honey
  • ¼ teaspoon ground cinnamon Maple syrup to drizzle on top

Preparation

  1. In a mixing bowl, use the paddle attachment on low speed to combine milk, eggs, oil, and applesauce. Mix for 1 minute until blended.
  2. Sift in flour, baking powder, salt, sugar, and cinnamon. Using the whip attachment on low speed, mix batter for 15 seconds until combined. Scrape down the sides of the bowl. Increase speed to medium and mix for 1 minute.
  3. Place about 1/4 cup of batter per pancake onto lightly oiled skillet, and cook until surface of pancake is covered with bubbles and bottom side is lightly browned, about 2 minutes. Turn and cook until lightly browned on other side, about 1 minute.
  4. Should make about 20 – 24 pancakes. Eat and enjoy!

Tip

Try making with berry sauce instead for variety.
