Cilantro Ginger Broccoli Noodle Bowl

A perfect one-dish meal – this tasty recipe delivers on all fronts: healthy, delicious, filling, and colorful! Simple to prepare, and great for those that are gluten-free!


  • 6 cups organic broccoli florets
  • 2 scallions
  • 1 tablespoon cilantro
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 2 teaspoons fresh ginger
  • 2 teaspoons low sodium Soy Sauce
  • 1 packet of rice noodles
  • 3 cups of organic mixed greens
  • 1 lime
  • 1 teaspoon sesame oil

  1. Wash, cut, and put aside the broccoli, cilantro and scallions.
  2. Boil water and blanch the broccoli for just one minute. (This leaves almost all of the nutrients in the broccoli.) Chill broccoli in the fridge for 20 minutes.
  3. At the same time that you are cooking the broccoli, boil water for rice noodles and cook. Set aside once done.
  4. Mix the soy sauce and rice vinegar together with the noodles.
  5. Mix the remaining ingredients with the broccoli, and then put the broccoli with the noodles. Toss together and serve!


Finish with a sprinkle of sesame seeds on top.
