Cucumber, Red Onion + Dill Salad

Light. Crisp. Colorful. A fantastic refreshing summer salad (but we love it so much that we eat it in the winter too!). Bright flavors and healthy ingredients make this a simple salad a winner.


  • 2 English cucumbers
  • 3 tablespoons raw organic apple cider vinegar
  • 1 teaspoon brown sugar
  • ¼ teaspoon sea salt
  • Freshly ground black pepper, to taste
  • 1 red onion (peeled, sliced, and broken into rings)
  • 1 teaspoon fresh dill

*Choose organic whenever possible

  1. Rinse the cucumbers, then thinly slice into circles.
  2. Place the vinegar, sugar, salt, and pepper in a bowl and mix until the sugar is dissolved.
  3. Add the cucumber and onion; if using dill, add that too, and toss well. Can be served at room temperature or chilled.


For a more colorful salad, add tomatoes.
