Lime Infused Carrot + Citrus Salad

We love pairing citrus with vinegar and spice – it’s a perfect blend of sour, spice, and sweet, and elevates a salad to a sublime place. Perfect on a hot summer day!

Ingredients

  • 1 grapefruit (peeled + chopped)
  • 1 orange (peeled + chopped)
  • 1 cup carrots (shred with peeler)
  • 1 red onion (sliced)
  • 10 cups of mixed organic greens (torn into pieces)
  • 2 tablespoons raw apple cider vinegar
  • 1 lime, juiced
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon water
  • ½ teaspoon sea salt
  • Fresh ground black pepper to taste
  • 2 cups of raw pumpkin seeds
  • 1 cup of beets (chopped)
  • 8 tablespoons walnuts (chopped, if you like)
  • Dash of chili flakes

*Choose organic whenever possible

Preparation

  1. Combine grapefruit, orange, carrots, onion, and mixed greens in a large bowl.
  2. Mix remaining ingredients in a small bowl, stirring with a whisk or fork until combined.
  3. Lightly pour dressing over vegetables.
  4. If using walnuts, sprinkle on top.

Tip

Add plain organic yogurt on top for a great flavor-contrasting garnish!
