Ingredients

  • 2 corn tortillas
  • 2 organic Pasture-Raised eggs
  • 2 tablespoons organic cheddar cheese, grated
  • 6 grape tomatoes, sliced
  • 1 tablespoon salsa

Preparation

  1. Top tortillas with salsa and cheese. Heat in a lightly oiled nonstick (we like ceramic) skillet until the cheese is melted.
  2.  In another lightly oiled, nonstick skillet, using low-medium heat, add eggs and cook, stirring frequently, until the eggs are cooked, about 90 seconds.
  3. While eggs cook, slice tomatoes.
  4. Divide the scrambled egg between the 2 tortillas, layer in the cut tomatoes, and enjoy!

Tip

Add some pepperoncinis for a spicy + tangy kick.
