Roasted Pork Loin with Garlic + Rosemary

Mary’s Gone Crackers are our favorite cracker – and since they’re gluten-free, you can go crackers too!

Ingredients

  • 2½ -pound boneless Certified Humane pork loin roast, well trimmed
  • 4 large garlic cloves, pressed or minced
  • 4 teaspoons fresh rosemary, chopped
  • 1½ teaspoons sea salt
  • Freshly ground black pepper, to taste
  • Fresh rosemary sprigs
  • Finely ground Mary’s Gone Crackers Herb Crackers (for garnish — optional)

Preparation

  1. Preheat oven to 400°. Line 13” x 9” x 2” roasting pan with foil.
  2. Mix garlic, rosemary, salt, pepper in bowl until an aromatic paste is formed.
  3. Rub garlic mixture over pork. Place pork, fat side down, in prepared roasting pan; cook 30 minutes. Then turn roast fat side up; continue cooking until thermometer inserted into center of meat registers 155°, about 25 minutes. Remove from oven; let stand for 10 minutes.
  4. Drain juices from roasting pan into small saucepan; set over low heat to keep warm.
  5. Cut pork crosswise into 1/3 inch thick slices; arrange on platter. Pour pan juices over meat; garnish with rosemary sprigs, if desired.

Tip

Pairs well with grilled asparagus and mashed potatoes.
