Scrambled Eggs with Smoked Salmon

Ingredients
- 4 Pasture-Raised eggs
- 4 slices wild smoked salmon, chopped
- 2 tablespoons organic low-fat milk
- Fresh scallions, finely chopped
- Extra virgin olive oil
- Sea salt and freshly ground black pepper to taste

Preparation
- In a bowl, whisk the eggs, milk, and fresh scallions. Season to taste.
- Add olive oil to skillet and then add egg mixture.
- Scramble the eggs while cooking.
- When the eggs start to settle add the smoked salmon and cook for 1 or 2 minutes.
- Serve with more scallions sprinkled on top.
Tip
A dollop of plain greek yogurt makes a delicious addition.
