Vegan Cauliflower Fettuccine Alfredo

Love alfredo sauce, but not the cream? Us too! This amazing cauliflower-based recipe packs all the delicious alfredo taste, and a serious nutrition wollop too. A sure-fire win for dinnertime.


  • ½ lb. gluten-free pasta of your choice
  • 4 cups organic cauliflower florets
  • 1 Tbsp. minced garlic
  • ½ cup unsweetened organic almond milk
  • ¼ cup nutritional yeast
  • 1 Tbsp. lemon juice
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • Sea salt, or to taste
  • Freshly ground pepper, to taste

*Choose organic whenever possible

  1. Cook pasta according to package directions.
  2. Place cauliflower florets in a large pot and cover with water. Bring to a low boil. Once boiling, cook for another 3-7 minutes until fork tender. Drain.
  3. Add cooked cauliflower, and all remaining ingredients to a blender and blend until completely smooth.
  4. Pour sauce over cooked pasta, serve, and enjoy!
