A mouthwatering protein-packed punch – this delicate dance of flavors is a winner. And is perfect for all of you trying to keep the carbs on the low side.


  • 4 Pasture-Raised eggs
  • 4 slices wild smoked salmon, chopped
  • 2 tablespoons organic low-fat milk
  • Fresh scallions, finely chopped
  • Extra virgin olive oil
  • Sea salt and freshly ground black pepper to taste

  1. In a bowl, whisk the eggs, milk, and fresh scallions. Season to taste.
  2. Add olive oil to skillet and then add egg mixture.
  3. Scramble the eggs while cooking.
  4. When the eggs start to settle add the smoked salmon and cook for 1 or 2 minutes.
  5. Serve with more scallions sprinkled on top.


A dollop of plain greek yogurt makes a delicious addition.
